Blackberry bircher muesli

Tart blackberries pair perfectly with the sweet apple flavour in this divine bircher muesli. Make it the night before and finish it off with fresh berries, nuts and seeds in the morning. It’s a healthy, delicious way to start your day.

  • Method

    1. Bircher muesli

      Place the oats, apple juice, yoghurt, lemon juice and cinnamon in a medium bowl and stir to combine. Add the apple and walnuts and stir to combine. Cover and refrigerate overnight.

    2. Serving

      Add the blackberries to the bircher and stir to combine. Spoon bircher into serving bowls and top with a dollop of yoghurt and a few extra blackberries. Scatter with almonds, toasted coconut, pumpkin, sunflower and hemp seeds.

  • Ingredients

    2½ cups (250 g) rolled oats
    1½ cups (375 ml) apple juice
    ¾ cup (180 g) natural/coconut yoghurt
    1 tablespoon lemon juice
    1 teaspoon ground cinnamon
    1 Granny Smith apple, unpeeled, coarsely grated or cut into matchsticks
    ½ cup (45 g) walnuts, coarsely chopped
    125 g punnet Driscoll’s blackberries 

    Toppings
    natural or coconut yoghurt, to serve
    ½ punnet (60 g) Driscoll’s blackberries
    almonds, coarsely chopped, to serve
    toasted coconut flakes, to serve
    pumpkin seeds, to serve
    sunflower seeds, to serve
    hemp seeds, to serve
