Berry crumble

You can't go wrong with a mixed berry crumble. It's so easy to make yet so incredibly delicious. Be creative with your berry combos, you can pick all four or combine your favourites. Just make sure to have your favourite vanilla ice-cream or custard on the side to top off this yummy dessert!

  • Method

    1. Berry mixture

      Preheat oven to 180°C. Combine berries and lemon juice in a medium bowl. Set aside berry mixture. Mix cornstarch with 1/2 cup sugar in a small bowl. Pour cornstarch mixture over berry mixture. Stir berry mixture gently until ingredients are evenly combined. Pour berry mixture into a 2-quart, or 9 x 9-inch, baking dish. Set aside berry mixture.

    2. Crumble

      Place flour in a large bowl. Add 3 tablespoons sugar. Add baking powder. Cut in butter with a pastry blender or two knives until mixture resembles coarse crumbs. Stir in cream to make a soft dough. Drop spoonfuls of dough over berry mixture. Sprinkle remaining 1 tablespoon sugar over dough.

    3. Baking

      Bake about 50 minutes or until top is well browned and juices are bubbly. Serve warm with whipped cream or ice cream.

    1 punnet Driscoll's strawberries, sliced
    1 punnet Driscoll's blackberries
    1 punnet Driscoll's raspberries
    1 punnet Driscoll's blueberries
    2 tablespoons fresh lemon juice
    ½ cup plus 4 tablespoons sugar, divided
    3 tablespoons cornstarch
    1 ½ cups all-purpose flour
    1 ½ teaspoons baking powder
    6 tablespoons butter, chilled and cut into pieces
    ¾ cup thickened cream
    whipped cream or ice cream
