A unique and refreshing cocktail made from your own strawberry simple syrup, fresh basil leaves, and your favourite gin. The flavour combination is perfectly balanced and makes for easy drinking at backyard barbecues or evening libations. Prepare the syrup ahead of time, as it will keep in the fridge for 2 – 3 days.
1/3 cupsugar
2/3 cupwater
1/3 cupDriscoll's Strawberries, chopped
3-4 Tbspstrawberry simple syrup
1 Driscoll's Strawberry, hulled
3 leaves basil, shredded or torn
1 Tbspfresh lemon juice
60mlgin
88mlsoda water
crushed ice
Strawberry Simple Syrup
Place sugar into a small saucepan. Add water and chopped strawberries and cook over medium heat until sugar is dissolved and syrup and simmer. Transfer syrup mixture to a glass container and leave the strawberries - don't strain. Chill in the refrigerator for at least 1 hour or until syrup is completely cooled.
Cocktail
Pour the strawberry simple syrup into a cocktail glass. Add 1 strawberry and 3 basil leaves. Muddle until strawberry is pureed and basil is gently crushed. Add 1 tablespoon fresh lemon juice, 2 ounces gin, and 3 ounces soda water. Fill cocktail glass to top with crushed ice. Garnish with additional fresh strawberries and basil. Serve immediately.
