A fun, lighter take on a nostalgic favourite, these Healthy Raspberry Wagon Wheels are crisp, creamy and coated in rich dark chocolate. With tangy raspberries, coconut yoghurt and a hint of maple sweetness, they come together in minutes and set into a deliciously satisfying treat. Perfect straight from the freezer, they’re a simple way to enjoy a classic flavour combo with a wholesome spin

Ingredients

4thin brown rice cakes

1 tbspmaple syrup

¼ cupdesiccated coconut

½cup coconut yoghurt

1125g punnet Driscoll's raspberries

300gdark chocolate, melted

Method

  1. Rice cakes

    Use an 8cm cookie cutter to cut the rice cakes into smaller disks.

  2. Building the Wagon Wheels

    Mix together the maple syrup, desiccated coconut and yoghurt. Line a tray with baking paper. Dip one side of the rice cake into melted chocolate and place on the prepared tray, chocolate side down. Spread the rice cake with yoghurt, arrange raspberries so they completely cover the yoghurt and drizzle more chocolate over the top to completely cover the berries. Repeat with the remaining. Freeze for a few hours before serving.
