Healthy Breaky Berry Pancakes

Ingredients

1 cupmilk

1 egg

olive oil, for brushing

3/4 cupwholemeal plain flour

1/2 cupinstant oats

3/4 tspbaking powder

1/2 tspbicarbonate of soda

3 Tbspcaster sugar

250gDriscoll's berries of your choice

maple syrup, to serve

Method

  1. Berry mix

    Crush half the berries in a bowl. Whisk in the egg and milk and combine.

  2. Pancake

    In another bowl, combine the flour, oats, sugar, baking powder and bicarbonate of soda.

  3. Cooking

    Heat a large pan over medium heat, brushed with olive oil. Dollop spoonfuls of the batter spaced evenly around the pan. When bubbles appear, flip the pancakes over and cook for a further minute or so. Serve with a drizzle of maple syrup and top with fresh berries.
