Super easy to make these Frozen Breaky Bars make a great summer treat. Recipe by: Justine Schofield
5 tbsphoney
1/3 cuppeanut butter
2 tbspstore-bought applesauce
3/4 cupoats
1/2 cuprice puffs
pinch salt
300gmixed Driscoll's berries
11/2 cupof Greek-style yoghurt
1tspvanilla bean paste
Preparation
Line a 20 x 20 (approx.) brownie tin with 2 sheets of cling film.
Berry mixture
In a mixing bowl combine 2 tablespoons of honey, peanut butter, apple sauce, oats, rice puffs and a pinch of salt. Press the mixture into tin and ensure it’s even. Put the berries and 2 tablespoons of honey into a small saucepan with 2 tablespoons of water and cook for 5 minutes or until they just start to break down. Cool to room temperature then spread over the oat base. Place in the freezer for 1 hour.
Yoghurt
Combine yoghurt with vanilla and remaining honey. Spread over the berry mixture. It’s ok if it ripples a bit. Cover with cling film and place in the freezer for 2-3 hours before portioning into bars and serving.
