This one’s all about big flavour with minimal effort. Sweet raspberries, melty cheese, and slow-cooked onions come together on a crispy base for the ultimate sweet-savoury combo. Quick to make, easy to love.
1store-bought pizza base
1 cupshredded mozzarella
1large onion, thinly sliced
1 tbspolive oil
1 tspbalsamic vinegar
1 punnetDriscoll's Raspberries
100grocket leaves
chili flakes, salt and pepper
Caramelised Onions
Heat olive oil in a pan over medium-low heat. Add sliced onion and cook slowly for 15–20 minutes, stirring occasionally until soft, golden, and caramelised. Add balsamic vinegar at the end if using.
The Base
Preheat oven according to pizza base instructions (usually around 200–220°C). Place the pizza base on a tray.
Assemble & Bake
Spread the caramelised onions evenly over the base. Top with shredded cheese. Bake for 8–12 minutes, or until the cheese is melted and bubbly and the base is crisp.
Finish & Serve
Remove from the oven and scatter over fresh raspberries and rocket. Sprinkle with chilli flakes and season lightly with salt and pepper. Slice and finish with a light drizzle of honey or olive oil if desired. Serve immediately.
