Create a delicious and healthy Blueberry Nice Cream with this recipe by Justine Schofield. Simply freeze ripe bananas and blueberries, and blend them with natural yogurt, honey, and a pinch of cinnamon until you achieve a smooth and ice-cream-like consistency. Serve it immediately with toasted almond flakes and fresh blueberries for a refreshing treat or store it in the freezer for later

Ingredients

2 ripe bananas

2 punnets of blueberries, plus a few to serve

80gnatural yoghurt

2 tbsphoney

Pinch cinnamon

Almond flakes, toasted, to serve

Method

  1. Freezing fruit

    Slice the bananas into rounds and place on a tray with 1½ punnets of blueberries. Freeze.

  2. Blending

    Place in a blender along with the remaining fresh berries, yoghurt, honey and cinnamon. Blend until smooth but firm like ice cream.

  3. Serving

    Serve immediately with toasted almond flakes and fresh blueberries or freeze in a container for later.
