Fresh, vibrant and full of texture, this Blueberry, Fetta and Almond Salad is a delicious balance of sweet, creamy and crunchy. Juicy blueberries, crisp fennel and toasted almonds come together with a silky avocado herb dressing to create a salad that feels both wholesome and a little bit special. Perfect for easy lunches, relaxed entertaining or brightening up any meal.

Ingredients

Salad

1cos lettuce, leaves chopped

½bulb fennel, thinly shaved

1punnet Driscoll's blueberries

½red onion, thinly sliced

100gfetta, thinly sliced

small handful flaked almonds, toasted

Avocado Dressing

½bunch parsley

½avocado

1 tbspapple cider vinegar

2 tbspGreek-style yoghurt or plain yoghurt

3 tbspextra virgin olive oil

Method

  1. Dressing

    Place all of the ingredients into a blender and blitz until smooth.

  2. Salad

    Place the lettuce, fennel, onion, blueberries and ⅔ of the fetta in a bowl and drizzle over a few tablespoons of the dressing and toss together.

  3. Assemble

    Arrange on a platter. Garnish with the remaining fetta and flaked almonds.
