Blackberry Bircher Muesli

Tart blackberries pair perfectly with the sweet apple flavour in this divine bircher muesli. Make it the night before and finish it off with fresh berries, nuts and seeds in the morning. It’s a healthy, delicious way to start your day.

Ingredients

2 1/2 cups(250 g) rolled oats

1 1/2 cups(375 ml) apple juice

3/4 cup(180 g) natural/coconut yoghurt

1 Tbsplemon juice

1 tspground cinnamon

1Granny Smith apple, unpeeled, coarsely grated or cut into matchsticks

1/2 cup(45 g) walnuts, coarsely chopped

125 gpunnet Driscoll's blackberries

Toppings

natural or coconut yoghurt, to serve

1/2 punnet(60 g) Driscoll's blackberries

almonds, coarsely chopped, to serve

toasted coconut flakes, to serve

pumpkin seeds, to serve

sunflower seeds, to serve

hemp seeds, to serve

Method

  1. Bircher muesli

    Place the oats, apple juice, yoghurt, lemon juice and cinnamon in a medium bowl and stir to combine. Add the apple and walnuts and stir to combine. Cover and refrigerate overnight.

  2. Serving

    Add the blackberries to the bircher and stir to combine. Spoon bircher into serving bowls and top with a dollop of yoghurt and a few extra blackberries. Scatter with almonds, toasted coconut, pumpkin, sunflower and hemp seeds.
